Breeding
Bottle aging in contact with yeast at room temperature for champagne (12 º - 15 ºC.), after disgorging. Aged in cellars for 15 to 18 months before disgorging.

Tasting Notes
Color: pale yellow with green hues, clean and bright. Fine bubble and continuousand persistent crown rosary accentuated by the presence of the Chardonnay.

Nose: Very complex, white fruits, apple, tropical, pineapple, some citrus, grapefruit, light floral notes, elegant aromas of brioche and nuts. Records very changeabledepending on the time in the glass.

Taste: It is comprehensive, balanced, creamy, with well-integrated carbon and with a touch of balsamic fennel and eucalyptus. Long aftertaste, again displayed the notesof nuts, hazelnut and toast with a light anise tones.

Pairing
Very versatile. Ideal to balance throughout a meal of new flavors, different texturesand combinations of the tasting menu, typical of the modern kitchen.
